Squeeze a little of the lemon juice from the wedge and drop into the glass. In a thin stick, pierce the three olives and put into the glass. Serve chilled!

Mix together 2 teaspoons of sugar, 6-8 mint leaves, Club Soda (sparkling water), juice of half a lemon, 2 fluid ounces of a light rum (usually white or silver in colour, very subtle in taste and with a hint of sweetness), 1 cup crushed ice in a cocktail shaker. About Spanish Cuisine

4. Pisto – Spanish Ratatouille – this is a vegetarian dish enjoyed as a starter, set as a side with non-veg items. It is usually made with vegetables like tomatoes, capsicums, onions, garlics, zucchini and olive oil.

4. Cured meats – pork is a widely consumed non-veg meat in Spain and amazing preparations like Chorizo (smoked and dried meat sausage), jamon (specially farmed meat slices) and salchichon (meat blended with chosen spices and dried) are found abundantly.

5. Paella –  this is a rice dish that has now travelled all over the world and has quite a few different recipes. But the traditional paella is cooked with meat (usually rabbit or chicken or both), lots of vegetables (bell peppers, beans, etc) and various seafood (prawns, fish, calamari, clams, mussels, etc.). It is usually a ceremonial dish and cooked in latge quantities over slow fire.

6. Fried Milk – among desserts, this is one of the most popular dishes. It is firm, cold milk pudding that is fried and served when hot, with a crust of flour and eggs. Thus it is crispy on the outside and smooth and melting inside. Fried Milk is a sort of Spanish version of a creme brulee.
