The preparation can be guessed of the terminology ‘vindaloo’ is disseminated. The Portugese term Vindaloo, has two parts – ‘vin’ refers to vinegar while ‘aloo’ means garlic in Portugese. Bursting with flavours and aromas, Pork Vindaloo is the Indianised name of the dish. Some claim the actual name of the dish was Pork Vindahlo.

The original authentic Pork Vindaloo that is prepared in the Portugese style is dominated with wine and garlic. The Goans, added Indian flavors to it and made it more tangy and appealing. The Indian version of it has some more ingredients like chillies, tamarind, black pepper, cinnamon, and cardamom. In India, though the term Vindaloo asserts potatoes as an integral part of the dish (since aloo means potatoes) but this stands untrue.

Toss pork, vinegar, and salt in a bowl. Cook cumin and poppy seeds, peppercorns, chillies, and cloves in for 1–2 minutes, until they pop.Grind the ingredients to powder and add to pork. Add Purée tamarind paste, turmeric, peeled garlic, red chilies, and ginger and make a paste.

Toss and cover the pork or meat with these spices for 4 hours.

In oil, cook mustard seeds and cinnamon until seeds pop, 1–2 minutes. Add chopped garlic, green chiles, and onion; cook until slightly caramelized, 8–10 minutes. Stir in pork and its marinate; cook until paste begins to brown, 5–7 minutes. Add salt and 1¼ cups water; boil. Reduce heat to medium-low; cook, covered and stirring occasionally, until pork is tender, about 1 hour. Stir in jaggery; cook until thickened, 8–10 minutes.

Pork Vindaloo is all set to be served hot and spicy.
