This is a dessert that is offered in South Indian temples. When served absolutely white with lots of butter thick in texture, then it is called Ven Pongal. Chopsuey has its roots in many cuisines across the globe – American Chinese cuisine, Filipino cuisine, Canadian Chinese cuisine, German Chinese cuisine, Indian Chinese cuisine, and Polynesian cuisine. It is also a part of Indonesian cuisine where it is referred to as cap cai.
This stir fried dish consists of lots of vegetables such as beans, sprouts, cabbage, celery and meat with a gravy or sauce. The egg poach on the top of it adds décor and taste. It is served with noodles or rice.

The two characters for chopsuey are pronounced as ‘tsa tsui’ in Chinese and ‘shap sui’ in Cantonese. It means “mixed small bits” or “odds and ends.”This refers to a kind of stew made of many different ingredients mixed  together.
To trace the history of this popular dish, it’s found in 80s, a group of writers or artist called Bohemians (Chinese immigrants in US) gathered in Mott Street to explore this new dish called Chopsuey. Soon thousands of non-Chinese were regularly making the trip to Mott Street  to eat chop suey. By the 1920s, Chopsuey spread across the United States as delicious dish just at a pocket expense of 63 cents.
The end result to this American pick up of a Chinese dish is that, today Chop Suey is of two types – American Chop Suey and Chinese Chop Suey.
The key difference between American Chopsuey  and Chinese Chopsuey is the former is a combination meat, eggs and veggies bound in thick gravy and served along with rice or noodles. Chinese Chopsuey is a pasta  based dish.

The ingredients of American Chopsuey are elbow macaroni, cooked ground beef, sautéd onions and green peppers in a thick tomato-based sauce. The pasta in American Chop Suey can be varied in nature- ziti, farfalle, or rotelle, in absence of elbow macaroni.
