‘Ganache’ is a French word for a glaze, icing, filling or sauce for any confectionery dishes such as pastries, cakes, croissants and other such food items. Ganache is a generic term and the texture, ingredients and taste of the ganache is modified, changed and reinvented according to the requirements of the dish to be made! Sometimes, ganache may contain liquor or sometimes any liqueur. It may also be made with fruit extracts. Depending on the type of chcoclate used and what the dish demands, the ganache is prepared. It is always the final step of the dish.

A dark chocolate cake with a thick ganache frosting sounds just heart melting, doesn’t it? Well, here’s how you can make it! You’ll need:

1 cup (2 sticks) unsalted butter, room temperature, plus more for pans
1/2 cup unsweetened Dutch-process cocoa (spooned and leveled), plus more for pans
2 cups all-purpose flour (spooned and leveled)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups packed light-brown sugar
2 large eggs plus 2 large egg yolks, room temperature
6 ounces bittersweet chocolate, melted
1 teaspoon pure vanilla extract
1 cup low-fat buttermilk

Preheat your oven to 176-180C. Rub butter into two 8-inch round cake pans and dust with cocoa, tapping out the excess. Line each pan at the bottom with a round of parchment/ tracing paper and set aside.

In a bowl, whisk together sifted flour, cocoa, baking powder, baking soda, and salt and keep aside.

In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Add eggs and yolks, one at a time, beating well after each addition; beat in chocolate and vanilla. With mixer on low, alternately add flour mixture in three parts and buttermilk in two, beginning and ending with flour mixture.
Divide the batter between prepared pans and smoothen out the tops. Bake until a toothpick inserted in center of a cake comes out clean which can take upto 40-45 minutes. Let the cakes cool in the pans for about 15-20mins and with a knife, separate cake from the edge of each pan. Invert cakes onto a wire rack and wait till cooled completely.

Set a rimmed baking sheet upside down on a work surface. Place one cake on sheet, and spread top with 1/3 of ganache. Place second cake on top, and spread remaining ganache over top and sides of cake. Using two wide metal spatulas, carefully transfer frosted cake to a serving platter.

2 cups heavy cream
1/2 cup confectioners’ sugar
1/8 teaspoon salt
1 pound bittersweet chocolate, roughly chopped

The procedure is rather simple: In a large saucepan, you need to bring 2 cups heavy cream, 1/2 cup confectioners’ sugar, and 1/8 teaspoon salt to a boil. Remove it from heat. Now add 1 pound bittersweet chocolate, roughly chopped, and let the mixture stand, without stirring, for about 1 minute. Whisk just until well combined. Refrigerate, stirring occasionally, until spreadable! Time you’d require for the whole this will be about 1 hour.

You’ll need: 16 ounces (1/2 quart) of tomato juice, 2 oz vodka, 2 tbsp barbeque sauce, pinch of paprika, salt, juice and pulps of 1/4 lemon, long chopped stalk of celery and a piece of thick-cut cooked bacon. Then, in a cocktail shaker, mix together the tomato juice, vodka, paprika, salt and lemon. Mix well. Fill a bucket or rocks glass, or a stemless snifter with ice. Common belief states that Valentine’s Day or the Feast of Saint Valentine came into existence to commemorate the chivalrious act of secretly performing weddings of soldiers who were forbidden to get married, by Saint Valentine of Rome for which he was imprisoned. The lore also tells that before his execution, the Saint wrote a letter to the jailer’s daughter, whom he healed during his prison sentence where he signed “Your Valentine”!! In the Anglican and Lutheran Churches, Valentine’s Day is an official feast day and there are different dates for the celebration of the same among the different schools of Christianity.

Ugadi – Kannadiga & Telugu New Year : Ugadi is celebrated in the states of Karnataka and Andhra Pradesh some time in the month of March–April, depending on the Hindu calendar system.

Ugadi Gudi Padwa – Marathi New Year: Gudi Padwa is celebrated on the first day of Chaitra month, depending on the Hindu calendar for all Maharashtrians and Konkanis. On this day a gudi is found hanging out on the right side of the main entrance of the houses which is a bright yellow cloth tied on the head of a long bamboo stick with an inverted and copper pot placed on it along with a garland made of sugar.

Gudhi Padwa Baisakhi – Punjabi New Year: The land of Five rivers, Punjab celebates the biggest harvest festival across the northern states on this day. Usually Baisakhi is on 13-14th April. It is celebrated as the day of the formation of the Sikh Khalsa. The main celebration takes place at the birth place of the Khalsa and at the Golden Temple in Amritsar.

Baisakhi Puthandu – Tamil New Year: The traditional Tamilian new year starts from either 13 or 14th April, or first day of Tamil month Chithirai. ‘Chitterai Thiruvizha’ is celebrated in the Meenakshi Temple Madurai. The main food of this festival is Mangai Pachadi.

Bohag Bihu – Assamese New Year: The spring festival “Bohag Bihu” celebrated in the middle of April as the beginning of agricultural bloom. The Assamese new year festival called ‘Bihu’ is the most important festival of Assam, celebrated by fun and abundance, faith and belief.

Poela Boishakh – Bengali New Year: The ‘Nabo Barsho‘ of Bengal is celebrated with great deal of enthusiasm and energy during the mid of April. Last week, I spent quite some time with friends here in Blue Frog and witnessed, experienced and enjoyed one of the best nights of excellent musical brilliance by a show of Anne Paceo, the drummer and musician of French Jazz. Yokai and Triphase are her bands…

Blue Frog literally offers a complete experience with all the music, great food and drinks. I ordered my favourite beer, which is, fortunately or unfortunately, Tuborg Strong! I have no explanation as to why I love its flavour and texture! Plus, even after four full bottles, the next day has been fresh and clean, without hangovers! What more one asks of a bottle of booze?

My friends and I settled for a great spot and we ordered plates of Garlic Pepper Shrimp, Hot Crispy Chicken Chaat, Kerala Tenderloin Chili Fry, Homemade Cheese Balls, Mixed Seafood Platter, Cold Cut Pizza and ended with Panna cotta and Tiramisu. One of us ordered an apple pie I think! Blue Frog is known to serve finger food mostly but eat it by the loads; it is a better dinner than full-fledged main courses! But don’t get scared at the quantity of food, we were 8 people and 5 were boys! I guess, that explains the ‘how’ behind all that we devoured!

The ambiance of Blue Frog is also quite amazing. State-of –art music systems, effective lighting that influences you, the strange yet sporty sponge like sitting holes and the comfort it offers to you as a customer is by far the best!
