On Gudi Padwa, every Maharashtrian household hoists an upside down new kalash made of silver, copper or bronze covered in a red, yellow or saffron cloth. The same contains a gathi (a type of sweet), neem leaves, coconuts, mango leaves and marigold flowers that signify a rich harvest. After hoisting it’s positioned to the right side of main entrance of the house so that passerby or neighbours can see it from a distance. Many call this as ‘the flag of Brahma’ (Brahmadhvaj) as on the same day, Lord Brahma is believed to have created the universe. ‘Ganache’ is a French word for a glaze, icing, filling or sauce for any confectionery dishes such as pastries, cakes, croissants and other such food items. Ganache is a generic term and the texture, ingredients and taste of the ganache is modified, changed and reinvented according to the requirements of the dish to be made! Sometimes, ganache may contain liquor or sometimes any liqueur. It may also be made with fruit extracts. Depending on the type of chcoclate used and what the dish demands, the ganache is prepared. It is always the final step of the dish.

A dark chocolate cake with a thick ganache frosting sounds just heart melting, doesn’t it? Well, here’s how you can make it! You’ll need:

1 cup (2 sticks) unsalted butter, room temperature, plus more for pans
1/2 cup unsweetened Dutch-process cocoa (spooned and leveled), plus more for pans
2 cups all-purpose flour (spooned and leveled)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups packed light-brown sugar
2 large eggs plus 2 large egg yolks, room temperature
6 ounces bittersweet chocolate, melted
1 teaspoon pure vanilla extract
1 cup low-fat buttermilk

Preheat your oven to 176-180C. Rub butter into two 8-inch round cake pans and dust with cocoa, tapping out the excess. Line each pan at the bottom with a round of parchment/ tracing paper and set aside.

In a bowl, whisk together sifted flour, cocoa, baking powder, baking soda, and salt and keep aside.

In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Add eggs and yolks, one at a time, beating well after each addition; beat in chocolate and vanilla. With mixer on low, alternately add flour mixture in three parts and buttermilk in two, beginning and ending with flour mixture.
Divide the batter between prepared pans and smoothen out the tops. Bake until a toothpick inserted in center of a cake comes out clean which can take upto 40-45 minutes. Let the cakes cool in the pans for about 15-20mins and with a knife, separate cake from the edge of each pan. Invert cakes onto a wire rack and wait till cooled completely.

Set a rimmed baking sheet upside down on a work surface. Place one cake on sheet, and spread top with 1/3 of ganache. Place second cake on top, and spread remaining ganache over top and sides of cake. Using two wide metal spatulas, carefully transfer frosted cake to a serving platter.

Now for the special ‘dark chocolate ganache’, you’ll need:

2 cups heavy cream
1/2 cup confectioners’ sugar
1/8 teaspoon salt
1 pound bittersweet chocolate, roughly chopped

The procedure is rather simple: In a large saucepan, you need to bring 2 cups heavy cream, 1/2 cup confectioners’ sugar, and 1/8 teaspoon salt to a boil. Remove it from heat. Now add 1 pound bittersweet chocolate, roughly chopped, and let the mixture stand, without stirring, for about 1 minute. Whisk just until well combined. Refrigerate, stirring occasionally, until spreadable! Time you’d require for the whole this will be about 1 hour.

INGREDIENTS
1 1/2 ounces light rum
3/4 ounce lemon juice
1/4 ounce simple syrup

These are the two constant ingredients and the rest that is added is largely variable, from beef consommé to celery, black pepper, lemon juice and what not!

Here is a close adaptation of a Jamie Oliver recipe for a spicy Bloody Mary version. You’ll need: 16 ounces (1/2 quart) of tomato juice, 2 oz vodka, 2 tbsp barbeque sauce, pinch of paprika, salt, juice and pulps of 1/4 lemon, long chopped stalk of celery and a piece of thick-cut cooked bacon. Then, in a cocktail shaker, mix together the tomato juice, vodka, paprika, salt and lemon. Mix well. Fill a bucket or rocks glass, or a stemless snifter with ice. Here is a recipe of a Vodka Martini for you:

3 fluid ounces of Vodka, 1 fluid ounce of dry vermouth, 1 cup of crushed ice, 1 lemon wedge and 3 olives for garnish. Mix the Vodka, vermouth and ice is a cocktail shaker and pour into a glass. Squeeze a little of the lemon juice from the wedge and drop into the glass. In a thin stick, pierce the three olives and put into the glass. Serve chilled!

A Mojito originated from the Cuban highball that traditionally contains five main ingredients – rum (white), sparkling water, sugar, lime juice and mint (leaves and sprigs). Here is a Classic Mojito recipe for you:

Mix together 2 teaspoons of sugar, 6-8 mint leaves, Club Soda (sparkling water), juice of half a lemon, 2 fluid ounces of a light rum (usually white or silver in colour, very subtle in taste and with a hint of sweetness), 1 cup crushed ice in a cocktail shaker. Pour into a mojito glass and garnish with a wedge of lime and a mint sprig. Serve chilled!

Rub a wedge of lime aling the rim of the glass and then dip it into a salty or sweet rimming salt or plain salt or powdered sugar. Pour in the cocktail mix and add lemon wedges for garnish.
