Sometimes, ganache may contain liquor or sometimes any liqueur. It may also be made with fruit extracts. Depending on the type of chcoclate used and what the dish demands, the ganache is prepared. It is always the final step of the dish.

A dark chocolate cake with a thick ganache frosting sounds just heart melting, doesn’t it? Well, here’s how you can make it! You’ll need:

1 cup (2 sticks) unsalted butter, room temperature, plus more for pans
1/2 cup unsweetened Dutch-process cocoa (spooned and leveled), plus more for pans
2 cups all-purpose flour (spooned and leveled)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups packed light-brown sugar
2 large eggs plus 2 large egg yolks, room temperature
6 ounces bittersweet chocolate, melted
1 teaspoon pure vanilla extract
1 cup low-fat buttermilk

Preheat your oven to 176-180C. Rub butter into two 8-inch round cake pans and dust with cocoa, tapping out the excess. Line each pan at the bottom with a round of parchment/ tracing paper and set aside.

In a bowl, whisk together sifted flour, cocoa, baking powder, baking soda, and salt and keep aside.

In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Add eggs and yolks, one at a time, beating well after each addition; beat in chocolate and vanilla. With mixer on low, alternately add flour mixture in three parts and buttermilk in two, beginning and ending with flour mixture.
Divide the batter between prepared pans and smoothen out the tops. Bake until a toothpick inserted in center of a cake comes out clean which can take upto 40-45 minutes. Let the cakes cool in the pans for about 15-20mins and with a knife, separate cake from the edge of each pan. Invert cakes onto a wire rack and wait till cooled completely.

Set a rimmed baking sheet upside down on a work surface. Place one cake on sheet, and spread top with 1/3 of ganache. Place second cake on top, and spread remaining ganache over top and sides of cake. Using two wide metal spatulas, carefully transfer frosted cake to a serving platter.

Now for the special ‘dark chocolate ganache’, you’ll need:

2 cups heavy cream
1/2 cup confectioners’ sugar
1/8 teaspoon salt
1 pound bittersweet chocolate, roughly chopped

The procedure is rather simple: In a large saucepan, you need to bring 2 cups heavy cream, 1/2 cup confectioners’ sugar, and 1/8 teaspoon salt to a boil. Remove it from heat. Now add 1 pound bittersweet chocolate, roughly chopped, and let the mixture stand, without stirring, for about 1 minute. Whisk just until well combined. Refrigerate, stirring occasionally, until spreadable! Time you’d require for the whole this will be about 1 hour.

Here is a close adaptation of a Jamie Oliver recipe for a spicy Bloody Mary version. You’ll need: 16 ounces (1/2 quart) of tomato juice, 2 oz vodka, 2 tbsp barbeque sauce, pinch of paprika, salt, juice and pulps of 1/4 lemon, long chopped stalk of celery and a piece of thick-cut cooked bacon. Then, in a cocktail shaker, mix together the tomato juice, vodka, paprika, salt and lemon. Mix well. Fill a bucket or rocks glass, or a stemless snifter with ice. The importance of ‘Coffee’ dates back to almost the 13th century when, on the Ethiopian landscape of Kaffa, coffee plants flourished in abundance. It was discovered by a shepherd when by eating certain berries of a certain tree, his flock of sheep would not sleep and be very active even through the night. The shepherd informed the Abbot of the local monastery who endeavoured to make a drink with the berries that made him stay awake and alert for long hours!

Gradually the word spread east and by the 15th century, the Arabian kingdoms were introduced to it through one of the greatest ports of the time, Mocha. Within a 100 years more, Egypt, Persia, Syria and Turkey were all in the habit of drinking coffee. Many public houses opened as coffee parlours and this became a trend. These public houses gained importance among the intellectuals and soon were regarded as centres for erudite interactions! The Dutch were proactive in cultivating coffee in the coasts of Malabar, India and some even reached Java, Indonesia.

By the 17th century, coffee reached the realms of Europe with the European explorers and got into the veins of the continent, regardless of the geographical or political boundaries. In Europe, the metropolitans of England, Netherlands, France, Germany and some other countries, already flourished in business and practice of consuming coffee. Many coffee houses were termed as ‘penny university’ because one could buy a cup of coffe for a penny!

The revolt against the increased taxes levied on tea, by King George, with the growing popularity of tea led to the ‘Boston Tea Party’ that marked a milestone in the American history. Common belief states that Valentine’s Day or the Feast of Saint Valentine came into existence to commemorate the chivalrious act of secretly performing weddings of soldiers who were forbidden to get married, by Saint Valentine of Rome for which he was imprisoned. The lore also tells that before his execution, the Saint wrote a letter to the jailer’s daughter, whom he healed during his prison sentence where he signed “Your Valentine”!! In the Anglican and Lutheran Churches, Valentine’s Day is an official feast day and there are different dates for the celebration of the same among the different schools of Christianity.
